Our whole cluster pressed Pinot Gris has a beautiful blend of acidity and fruit. We take special care in the hand harvesting and gentle pressing of the whole grape clusters to avoid bitterness and maintain the delicate acidity. The resulting wine has flavors of ripe yellow apple and lemon peel with an elegant mineral finish.
Whole Cluster pressed slowly and lightly while monitoring the must pH. Cold fermentation to maintain fruit and freshness. Malolactic fermentation was discouraged. Aged in stainless steel.
