Ice Wine is a special dessert wine made from grapes that are left on the vine until winter temperatures drop below 17 degrees. After they freeze on the vine, the grapes are pressed while still frozen. Much of the water remains frozen while only the most concentrated juice is released. The resulting wine is lusciously sweet, but balanced by high acid and pronounced flavors of orange marmalade, marzipan, and ripe peaches. The long citrus finish makes this wine a perfect dessert pairing.
