Lake Michigan Shore
Our Cabernet Sauvignon comes from a 20 year old vineyard farmed by Joe Hermann, a pioneer in regenerative farming in Michigan. There are no herbicides used and the vineyard rows contain an undergrowth of native ground cover to suppress weeds. Many of the vines look more like small trees than grape vines! The farming is only the beginning. We took special care in making this wine, starting with a special Bordeaux yeast for fermentation, 23 day maceration on the skins, and 9 months in French Oak barrels. The structure of this wine is full, but not harsh, and it supports the generous flavors of red currant fruit beautifully. Additional hints of dried herbs and forest floor emerge in the glass. The 2025 Vintage featured a hot and dry fall that ripened our red grapes perfectly - this is a once in a decade wine!
Fruit was grown and hand harvested by Joe Hermann at his home farm in Coloma, Michigan using Regenerative Farming methods. Fermented in 1 ton fermenters at 80+ degrees for optimal extraction. Macerated on the skins for 23 days. Aged in a mixture of new & used French Oak for 9 months. Unfined. Unfiltered. Small amoutn of Merlot and Carmenre added for fruit and spice components.
